Jamie Moore Reflection 

Jamie Moore is the director of sourcing and sustainability for Eat’n Park Hospitality Group, where he develops and executes initiatives that strengthen the company’s sustainability efforts. Jamie expressed his love for food and he was able to take his passion and turn it into a career. At a young age, Jamie started off small and worked for burger king, eventually moving forward in his career and ending up at Parkhurst. Parkhurst Dining was founded in 1996 and is dedicated to creating personal relationships and authentic culinary experiences for corporations and private higher education institutions. In his presentation, Jamie touched on the different distribution models when working in the food industry. Milkman Model is a delivery person who delivers milk, often directly to customers’ houses, in bottles or cartons. As a result of this: we would be adding more jobs for people in the union, working on portion control and finding new ways of using within our means, also reusing milk containers instead of throwing them away. Another model Jamie talked about was The Hub and Spoke, which is a model that arranges service delivery assets into a network consisting of an anchor establishment also known as the hub, which offers a full array of services, complemented by secondary establishments also know as spokes. Both models give a good description of how our food industry works and the steps it takes to get us food in a timely matter. I have a better understanding of the food provider at our school, even though the food might not be up to my standard with the home cooking I get from home, but Parkhurst does a good job with adding fresh produce into our diets. With the mass production of food coming out of our kitchen it is hard to prepare delicious home-cooked meals. Jamie also expressed “it’s not the fact that we don’t want to prepare perfectly seasoned food, but it’s hard to prepare and flip meals within a short period of time.” Supporting local family farms is also a great indicator that our food is fresh and not being pumped with steroids, no extra GMO’s added to our food that we will consume.        

Project Management assignment review

Nicole and I chose Asana as our way to stay organized and keep on track with assignments, this software tool was recommended by our professor who uses this tool as well. Nicole was the one who started adding stuff for us to check off and follow as we complete this course. Asana kept us up to date on what needed to be done and handed in for the upcoming classes. Honestly, Asana is a great tool to use when needing help to stay organized, but I often forgot to update the checklist because Nicole and I had great communication and had a solid plan along the way. I never relied on Asana for my updates and what needs to be done for our project, Nicole and I constantly kept in contact and would meet up when need be. I have a pretty good project management mindset already, I live a pretty organized life and use my day planner to jot down notes when I need to remember something. I tend to follow along better when I write something down rather than looking at a screen for my to-do list. Nicole seemed to use Asana more than I did, she did an amazing job of keeping organized and setting up sections for each due date. 

E- portfolio reflection

I actually really enjoyed making an e-portfolio, although I ran into a lot of technical difficulties with the webpage; I liked how I was able to create and personalize my webpage to fit my personality.  I think it’s important to stop and reflect on my work because I can go back and see which assignments I did better on than others, and which assignments I’m most proud of. Reflections also help me remember the important aspect that I came across, for example, I really enjoyed Jamie Moore’s talk on his life working in the food industry and how it made him the man he is today. I will definitely start up another portfolio this way when it comes to presenting myself in front of future career paths.

Communication Reflection

I was very fortunate to have Nicole as my partner, she worked equally as hard when completing our project. Many of my professors have said working with someone other then a friend can have a positive impact on your project because it helps build a form of trust for each other when completing work. It was nice to work with Nicole because we already had a nice form of communication and were able to work around our busy schedules. It was also nice to be able to have a great relationship with Alethea when completing our project, we were able to get quick responses and meet with Alethea frequently when working on our project. It’s important to have a strong form of communication because it will reflect on the project and how you carry it out. It will show how much time and effort you put in when working together in a team. Due to this Coronavirus forcing everyone home I was concerned about fulling this project at home, and not having the communication from everyone to help move along this project. Thanks to Zoom we were able to continue the conversation in the comforts of our own homes, email has also been very helpful. After the global pandemic is over I am confident that we will be able to take the Move-out program and accomplish all of our starting goals.
